Latest version is 5.8.0 as I write this. But maybe you don’t need to wait author to update it on Itch to be up-to-date.
On Linux, proceed to the software center that your distribution provides and find “Minetest” and make sure it’s either from Flathub or latest package - from there, engine’s updates should be handled by your usual software update workflow.
On Windows, I don’t really know the best option, but maybe there is an auto-updating launcher for it. Just make sure it’s open source and audited. (Funny advice, since nobody has time for this, I know.) In any case, you always have official Downloads section.

Dude, you are hurting it by not correcting the instalation error. I would recomend to check how to fix it if you do not know how.
